Cut the bell peppers in half through the stem. Leave the stem attached, but remove the seeds and membrane.
Glaze the baking tray with oil.
Place the bell peppers onto the baking tray.
Bake for 20 minutes.
After the bell peppers are half-cooked, crack a whole egg into each bell pepper half.
Season each bell pepper with a pinch of salt and ground black pepper.
Stuff each bell pepper half with tomato, spinach, basil, mushrooms, and cheddar cheese (optional).
Bake for an additional 15 minutes until the egg whites have set or until eggs are cooked according to preference.
Cool for 3 minutes.
