Preheat grill. Zest lemon (1 tsp), squeeze for juice (2 tbsp), chop cilantro, and whisk together with yogurt and 1 tsp seasoning until blended.
Place beans, tomato mix, and water in a microwave-safe bowl with cover. Microwave on high for 6–8 minutes or until tender. Drain bean mixture. Microwave the grains (follow package instructions). Combine bean mixture and grains. Cover and set aside.
Coat fish with 3 tsp seasoning and oil. Grill 4–5 minutes on each side or until charred. Serve fish over grains topped with yogurt sauce.
For the salad: Zest lemon (1 tsp); squeeze for juice (2 tbsp). Squeeze limes for juice (4 tbsp). Chop garlic and cilantro.
Whisk zest, juices, garlic, cilantro, oil, salt, and pepper until blended. Place beets in ziplocked bag; add the juice mixture and shake to coat. Let stand at least 20 minutes to marinate.
Place zucchini in large bowl and combine with beet mixture.
